I wrote this several weeks back, and didn’t post it right away. I just baked the last frozen batch of these cookies last week, and I think there are only three left! Looking back, I really loved Christmas this past year, and I am so excited to share this recipe with you all.
It’s the first week of December, but it’s already starting to feel a lot like Christmas at home. The tree is sparkling with icicle ornaments dancing in multicolored lights and I have my favorite Christmas song playing, “We Three Kings”, as I am preparing to make this cookie dough for baking day at my mom’s this weekend. Right now, I am working on the dough for these Cranberry Orange Cookies. Although I have yet to bake them, the aroma of orange and clove is already filling the kitchen with warmth. I have made five, YES FIVE, batches of this recipe to freeze. Last year, I found myself making them over and over again for my family, as they quickly became a favorite. I hope you like them as much as we do!
Cranberry Orange Cookies
Ingredients
- 6 Tbsp. Butter (or dairy free butter) at room temperature
- 1/2 cup Granulated Sugar
- 1/4 cup Light Brown Sugar firmly packed
- 1 Egg
- 2 tsp Grated Orange Zest
- 3 Tbsp. Thawed Frozen Orange Juice Concentrate
- 1 1/3 cup All Purpose Flour Gluten Free if needed
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/2 tsp Ground Cloves
- 1/4 tsp Salt
- 1 1/4 cup Dried Cranberries
Instructions
- Preheat the oven to 375F.
- Use parchement paper to line a baking sheet, or lightly grease.
- In a large bowl, add butter and sugars. Cream together with a mixer until light.
- Blend in the egg, orange zest, and orange juice concentrate.
- In a seperate bowl, put in the flour, baking powder, baking soda, cloves, and salt. gently mix until combined.
- Slowly add the flour mixture to the wet ingredients and mix until well blended.
- Fold in the cranberries with a spoon.
- Using a scoop or spoon, drop rounded spoonfuls onto the prepared cookie sheet.
- Bake until golden brown, about 10-12 minutes.
- Move from cookie sheet to a cooling rack to cool completley.
